Greek Flare Meal

Tzatziki Sauce
3” piece of medium cucumber, peeled and finely chopped (seeding them is optional)*
1 tsp. white onion, diced
¼ cup Zour Cream*
1 tsp. olive oil
1-2 tsp. lemon juice or white wine vinegar
¼-½ tsp. salt
¼ tsp. dill
¾ tsp. oregano
¼ tsp. powdered garlic
salt and pepper to taste
*Try to use a thicker version of this sauce by adding less water to the original recipe. If it is a looser version, add ¾ tsp ground flaxseeds.
Ground Beef Gyros
1 lb lean ground beef or turkey
1 ½ teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
3/4 teaspoon pepper
chopped tomato
chopped purple onion
8 small homemade corn tortillas
In separate bowl, combine ground beef and seasonings. Mix well (for ideal texture, puree the meat and spices in a food processor). Shape into 4 patties, compacting them as much as possible. Grill or oven broil these for 10-12 minutes or until meat is no longer pink, turning once. Cut the cooked patties into thin slices and enjoy. Garnish with tomatoes, onions, and a generous amount of sauce.
Athena Salad
Make a generous amount of salad with dark lettuce and diced red onions. Serve on individual plates if you don’t think you’ll use all the lettuce mix. Drizzle each salad with olive oil and lemon juice. Add diced tomatoes, a sprinkle of oregano, sea salt and pepper. If you have them, garnish with a small handful of green olives. If not, add a bit more sea salt. Store the leftover salad mix (lettuce and onions) for a quick snack—the tomatoes and dressing will make it wilt quickly.
