Beef Stroga-Not
Made this up when I was super hungry and staying off dairy!
5-6 baby bello or button mushroom, quartered
1 tsp. tarragon
¼ tsp. garlic powder or 1 minced clove
1-2 Tbsp. oil
2-3 oz. steak portion, fat trimmed, sliced into ¼” strips
1 jalepeno, whites and seeds cut out, diced
2 dollops of Zour Cream
Salt and pepper to taste
Sauté the mushrooms in the oil, about 5-6 minutes. Remove from pan, but leave any remaining juices. In the same pan, sauté the meat and jalepeno. Place the cooked meat over the cooked mushrooms and cover with Zour Cream sauce. Salt to taste.
Serve with a nice salad!
