Homemade Creamsicles! A Kid-FriendlySummer Treat!

Chocolate Parfait
1 package banana instant pudding (about 3.5 oz)
1 package chocolate instant pudding (about 3.5 oz)
2 Tbsp. creamy peanut butter (optional, but oh so good!)
4 cups milk

Blend all the ingredients, then immediately pour into popsicle molds (it's instant pudding, remember?).  If using popsicle sticks, just let the poured mixture set for a  few minutes and then it will easily hold the stick in place.    For a different taste, substitute any part of the milk for vanilla yogurt.  Or add an extra 1/2 to 1 cup to the above mixture.  Freeze for about 4 hours, and enjoy!

Here are a couple of variations that we have created and really enjoyed:

Orangecicles
2 packages instant vanilla pudding mix (about 3.5 oz each)
3 cups milk
1 cup orange juice

Coconut Heaven
1 package instant coconut cream pudding mix (about 3.5 oz)
1 package instant banana pudding mix (about 3.5 oz)
4 cups milk

Strawberry Banana
2 packages instant banana pudding mix (about 3.5 oz each)
3 cups milk
1 cup pineapple juice
1/4 to 1/2 cup minced strawberries (fresh or frozen)

Tropical Breeze
1 package instant coconut cream pudding mix (about 3.5 oz)
1 package instant banana pudding mix (about 3.5 oz)
1/2 cup orange juice
1/2 cup pineapple juice
3 cups milk
1/4 cup minced or pureed mangoes (optional)

Coconut Macaroon
1 package instant coconut cream pudding mix (about 3.5 oz)
1 package chocolate instant pudding (about 3.5 oz)
4 cups milk

Pina Colada

2 packages instant coconut cream pudding mix (about 3.5 oz each)
3 cups milk
1 cup pineapple juice

Pistol Pete’s Creamsicle

1 package instant pistachio pudding mix (about 3.5 oz)
1 package instant vanilla pudding mix (about 3.5 oz)
4 cups milk

You can use any combination of your favorite pudding mixes and about 4 cups liquid (try to keep the ratio of at least 3/4 of that liquid being milk or yogurt).  Happy Summer!
