Veggie Burgers

1 small onion, finely chopped
1-2 clove of garlic, minced
2 small carrots, grated
2 small zucchini, grated
2 tsp. olive oil
1 ½ cups rolled oats
¼ cup cheese
1 egg
soy sauce to taste
1 ½-2 cups all-purpose flour

Sautee the onions, garlic and oil for 5 minutes on medium-low heat.  Add the zucchini and carrots, cooking for 2 minutes more.  Remove from the heat and blend in the oats, cheese, egg and seasoning.  Let cool for 1 hour in the fridge.

Form the cooled mixture into hamburger patties.  Dredge in the flour, covering both sides.  Place on a greased broiling pan or a non-stick baking pan.  Spray the top with cooking spray.  Broil on medium heat for 5 minutes.  Turn, and broil 5 minutes more.
